Wash it thoroughly in fresh water and make sure to get all of the hair off the meat. Then put it into a Ziploc bag, squeeze out all of the air and freeze it.
salt water works fine but I prefer to soak in buttermilk like my dear-departed grandmother taught me
i like to soak mine in a pan of salt water if i was using a shotgun to get him...then bag and freeze









you should soak it in salt water for a couple of hours first.... then freeze
